This chocolate mousse is simple and quick to make, and can even be considered a healthy dessert thanks to the low sugar content and beneficial antioxidants from the dark chocolate. It’s lovely and rich so you’ll get your chocolate fix without overindulging.


Ingredients – makes around 24

Serves 4

• 2 eggs, separated

• 75g dark chocolate, between 70–80% cocoa solids

• 2 tbsp coconut sugar – we used Palmyra Jaggery for its superior nutritional profile

• 25g unsalted butter


Melt the chocolate with the butter over a very gentle heat, then remove from the heat and let it sit for a minute. Meanwhile, whisk the egg whites to form stiff peaks. In a small bowl combine the egg yolks and coconut sugar, and stir this into the melted chocolate. Then fold the whisked egg whites into the chocolate mixture carefully until well incorporated. Divide between four glasses, ramekins or small bowls and refrigerate for a couple of hours or until set.
