Protein and oat no-bake crunchies

These delicious snacks deliver plenty of natural protein, healthy fats and fibre, plus they’re light on sweetness, containing only 1.5g of natural sugar, from maple syrup, per crunchie – that’s less than half a teaspoon!

Two crunchies provide 12g protein, as well as cinnamon, to help keep blood sugar levels balanced when you're on the go.

Ingredients – makes 12

150g rolled oats

6 tbsp (90g) crunchy peanut butter (sugar-free)

75g hemp seeds

3 tbsp maple syrup or runny honey

2 tsp cinnamon

3.5 tbsp coconut oil

Melt the coconut oil in a medium saucepan over a low heat, then add the peanut butter, stirring to soften. With the heat still on, add the rest of the ingredients and mix well to combine. Line a 12-hole cupcake tin with paper liners, and fill each generously with the mixture, pressing down well to help them set. Leave in the fridge for an hour or so, until set. Enjoy!
